It was during that time he was introduced to the world of Texas craft barbecue: a gritty, soulful, and tightly knit community where smoke, fire, and hospitality intertwine. What began as curiosity quickly became a calling, blending his classical training with the raw authenticity of pit-smoked meats and the camaraderie of the pitroom.
